Bacon Wrapped Sweet Potatoes – Healthy Cooking
Bacon wrapped sweet potatoes served with fried eggs, cucumber, tomatoes, and radishes.
Ingredients:
1 medium size sweet potato, sliced into rounds and peeled
2 streaky bacon per 1 round sliced potato
Coconut oil
Ground black pepper
Dried oregano
Method:
Rub some coconut oil on both sides of the sweet potatoes, sprinkle with black pepper and oregano and bake in the oven for 15 minutes, depending on how thick your potato rounds are. You can test if it’s done by pricking with a fork. Once it is done but not overly done. Bring it out of the oven and wrap 2 streaky bacon round it, making sure the end of the bacon is facing down on the baking tray.
Preheat the grill and grill the bacon wrapped potatoes till crispy. Keep an eye on it so they don’t get burnt. Serve as sides for breakfast, brunch or lunch.
